Oysters

Aren't these beautiful! This is a platter of oysters from the Pemaquid Oyster Festival in Damariscotta, Maine. They take their seafood seriously in Maine! Here is a description excerpted from http://www.oysterguide.com/: "Another brilliant oyster from the deepest holes of the Damariscotta River. Pemaquids are even brinier than Glidden Points, very firm, deliciously lemony and light, with a rock-hard brown-and-white shell. It’s hard to believe an oyster that substantial could taste so clean." I agree!

That is an interesting website; I never realized there were so many different varieties. I would try those...based upon the review!

Wow! How I miss my Paris incursions for oysters; it could also be NYC and the Grand Central Station Oyster Bar... ;)
